Say cheese at Shadowfax

Cheese experts Ellie and Sam Studd will visit Shadowfax Winery in Werribee South to present a four-course menu featuring their favourite cheeses later this year.

The event is being presented as part of the Melbourne Food & Wine Festival Winter Edition.

The “Studd Siblings”, who are daughter and son of international cheese specialist Will Studd, will talk about the cheesemaking process and what drives the texture, aroma and flavour profile of cheese.

Each course will be matched with Shadowfax wines, as winemaker Alister Timms discusses his favourite wine and cheese matches.

Mr Studd said he and his sister enjoyed telling stories and conveying traditions through cuisine, and also bringing people together.

“I think cheese, wine and food are great vessels for learning and culture,” he said.

Mr Studd said one example was of this is Brillat-Savarin, a soft-ripened triple cream cow’s milk cheese created circa 1890.

The cheese is named after Jean Anthelme Brillat-Savarin, a French lawyer and politician who was also a food critic famous for coining the term: “Tell me what you eat, and I will tell you what you are.”

Mr Studd said they have worked closely with the chefs at Shadowfax to plan the meals and wine for the event.

“Cheese is the catalyst to bring out the flavour in the menu,” he said.

Mr Studd they also aimed to make cheese and wine “approachable” for everyone.

“Cheese and wine can be really intimidating,” he said.

“But all you need is a couple of keywords, a bit of background and you have the way to share the story and knowledge with people.”

Get Cheesy with the Studd Siblings at Shadowfax will be held from 6-10pm on Friday, October 8 (rescheduled from August due to the pandemic). Tickets: $154, including a welcome cocktail, canapes on arrival and a four-course dinner with matching wines.
