Delicious dream team: Time for Maltese Cook-Off

Do you have what it takes to be the next Maltese culinary dream team?

Registrations are now open for the fifth annual Maltese Cook-Off, which will be held at the William Angliss Institute on August 16.

Maltese-Australian community group Nisga is on the look-out for 10 teams of three, each of which will cook up two traditional Maltese dishes.

Each team must be made up of family and friends over the age of 15. Organiser Sandra Mooney said it was important to pass on the tastes and recipes of Maltese cuisine down the generations.

Ms Mooney said ravioli, rabbit, fish, macaroni, baked rice, soups, trifles and almond tarts were among popular Maltese dishes that show up in the competition each year.

“We have to try and keep the Maltese culture alive in Australia,” she said.

“At the event, we have a cross-generation of Maltese Australians, all sharing their stories and laughter and enjoying the entertainment. The food is rustic and divine – the day just gets better each year.”

Last year, father and daughter Emmanuel and Tanya Cilia, and niece Nadia Sammut, wowed the judges with their brungiel mimli (stuffed eggplants) and Kinnie cake to take out the top prize. This year’s winner will enjoy dinner at Maha restaurant, while the runners-up will receive hampers of Maltese goods.
